Filet Mignon, roasted broccoli, mashed potato's with mushroom wine sauce.

This is the ultimate Meat & Potato's dish! MmmMmm is all i can say.






What you will need:
Filet Mignon (or anyother steak that you like that is on sale, i just prefer filet mignon)
McCormic Montreal seasoning
Coffee
Salt n pepper
tumeric (if you like it)
Potato's, however much you need for how many people.
Heavy cream
Butter
Shallots chopped
White/Red wine
Mushrooms chopped (i use baby bellas to add to the beefy flavor)
Chicken stcok
Broccoli scliced
Red onions sliced
garlic chopped
orange bell pepper, or whatever you have. sliced.
Olive oil
Balsamic 




Your How To:


Boil potatos.


Heat oil in skillet. Add steak spices in small bowl. Montreal seasoning, salt, dash of coffee grounds and tumeric. Rub on steak. Place steak in skillet to brown both sides (may need to do this in increments, that ok)
Turn Broiler on. When browned, finish off in the broiler. about 3-4 mins on each side for med-well. Less time for more rare.
Throw shallots in the same skillet you browned the steak, with the bits. Soften. Add mushrooms, brown. Deglaze the skillet with about a cup or less of wine. Reduce to about half. (start slicing all you veggies. Broccoli, garlic, onion and peppers) Add chicken stock and water if needed. let simmer, it will reduce a little. Add Heavy cream. 


Add garlic to another skillet soften a tad. Add peppers. Add Broccoli and onion. add more oil if needed. Toss around.. Cover on med/low heat. let it steam till semi tender, you will want a little crunch to give a different texture to your meal.


Drain potato's. Smash. Add butter, heavy cream and salt n pepper. I like to add a dash of Parmesan or Romano Cheese, only if i have it on hand though.

Isn't This the TRUTH!


Sometimes, honestly all I have time for is housework. 3 boy's can destroy a house in a matter of MINUTES!.. Well 4 counting Brian ;) 
Ever just WISH there was more time in the day? Cause I sure as heck do! Some days it feels as though I don't have time for my KIDS! Leave the GYM outta the equation, for sure. The good part, you may ask? Is that sometimes I am sweating like a mad woman.. I will have sweat dripping down my back cause i am sweeping so darn hard lol... So i guess yes, house cleaning is a GREAT workout!

Black Bean Taco's

I love these taco's. Packed with protein and "good for you" fats. My boys aren't to crazy to all the "red" and "green" stuff... but if i leave out the peppers and tomato's they really like them.




What you will need:
1 can black beans
1 can of whole kernel corn
1/2 green bell pepper chopped
1/2 red bell pepper chopped
2-3 cloves of garlic chopped
1/3 red onion chopped
1 tomato chopped (no juices or ribs.)
1 tbls Salsa
handful of cilantro chopped
1/2 lemon juice
1 avocado cut into bite size
tbls olive oil
salt n pepper
corn tortillas

DO:
drain and rinse black beans and corn.. Add oil to saute pan. throw in peppers, garlic and onion saute for about a min and a half throw in black beans and corn.. saute around for a few mins.
Add to bowl.. Add cilantro, lemon juice, salsa and tomatos toss around... salt and pepper to taste.
heat up totilla on stove and add bean mixture.... SOOO GOOD!

Adding a can of pinto beans makes more for more people and is also a great flavor and protein to add.

Tortilla Soup.

This is the first post. So I'm going to post a recipe that i do quite often. It's easy and Parker and Brayden LOVE it, so does Brian. It's jam packed with veggies. There is NO chicken. BUT by all means feel free to add some pre-cooked chicken. (I just prefer the veggies)









You Will Need: (amounts vary for how much you want or how many your cooking for. Make it you own momma!)

Carrots chopped
Potato's chopped
Red/Green Bell Pepper's chopped
Onion chopped
Garlic Chopped
Yellow Squash chopped
Zucchini chopped
Fresh or Frozen Whole Kernel Corn. (You can def use can corn too. Just a little fresher tasting with fresh.)
Heavy Cream
1 Can Black Beans (Ya, i am for sure NOT doing those from scratch for a "quick" meal)
Tomato's chopped (You can use canned too. I like the canned with green chilies.. yummy!)
Chicken base. (I buy the kosher kind but ANY kind of broth/stock will work)
Olive oil, for sauteing and to fry the tortilla.
SEASONING:
Cumin, Salt&Pepper, Parika, Fresh Parsley and Fresh Cilantro (DEF recommend fresh. I'm not crazy about dried)
GARNISH:
Avocado sliced
Cheese shredded
Tortilla Strips
Cilantro
Dollop of Sour Cream. (not shown in pic. Brian doesn't like it lol)


How to Make it:
In a Dutch Oven or any other Stock pot, add oil and chopped potatoes. Season with salt, pepper, a little paprika and cumin. Saute for about 10 mins. Add chopped carrots, season with salt and pepper and cumin. Saute for about another 10 mins.
Add red and green bell peppers, season. Add onion and garlic, season. (in case you're wondering.. i season every time i drop in something new. That way the salt is about perfect by the time the meal is done.)
Add zucchini and squash. Saute all together for 10 mins.
Add Chicken stock and water if needed. Fill her up cause that will be the amount of soup you have when done (a little less actually after reducing.) Add heavy cream, as much as you desire.
Bring to boil. Taste, add salt n pepper as needed. May need MORE cumin. (i always add more.)
Once boiling add black beans, corn and tomato's. Bring to boil. Add cilantro and parsley.


Take corn tortilla's, cut them in strips. Fry in oil.


Spoon soup in bowl, garnish with sour cream, cheese, sliced avocado, tortilla strips and to make it fancy add a sprig of cilantro on top.
