Black Bean Taco's

I love these taco's. Packed with protein and "good for you" fats. My boys aren't to crazy to all the "red" and "green" stuff... but if i leave out the peppers and tomato's they really like them.




What you will need:
1 can black beans
1 can of whole kernel corn
1/2 green bell pepper chopped
1/2 red bell pepper chopped
2-3 cloves of garlic chopped
1/3 red onion chopped
1 tomato chopped (no juices or ribs.)
1 tbls Salsa
handful of cilantro chopped
1/2 lemon juice
1 avocado cut into bite size
tbls olive oil
salt n pepper
corn tortillas

DO:
drain and rinse black beans and corn.. Add oil to saute pan. throw in peppers, garlic and onion saute for about a min and a half throw in black beans and corn.. saute around for a few mins.
Add to bowl.. Add cilantro, lemon juice, salsa and tomatos toss around... salt and pepper to taste.
heat up totilla on stove and add bean mixture.... SOOO GOOD!

Adding a can of pinto beans makes more for more people and is also a great flavor and protein to add.

  1. These look so good. I will have to put them on my "to try" list. Would be great for lunch with my friends or kids as is. I'd have to add chicken for hubby.

  2. YES! Totally add chicken.. Brian LOVES chicken in it. A lot of the times i don't only cause it takes up time and i need to make it quick. Unless i have left over chicken breast from the night before. They are delicious though :)
